Charcoal grilled pizza Print this recipe
We love this recipe on a perfect spring or summer evening when the grilling is good! It's perfect for when you don't want to heat up your house with the oven. This recipe is also perfect when you have fresh produce from the garden you can pile on the pizza - whatever you can find, we love to be creative with our pizzas!

Basic pizza dough:
We make our dough in a countertop KitchenAid Mixer and knead it with the dough hook, but it can easily be done in a regular mixing bowl, by hand.
1 pkg rapid rise dry yeast
1 cup warm water
1/4 cup olive oil
1 t. salt (can user kosher salt)
3 1/2 cups flour

1. Dissolve the yeast in the warm water. Let stand 5-10 minutes or until mixture is frothy.
2. Combine yeast mixture, olive oil, and salt in mixing bowl.
3. Add flour, 1 cup at a time, while dough hook is mixing at medium speed.
4. Knead mixture at slightly higher speed 3-5 minutes until dough is smooth and uniform.
5. Brush a small amount of olive oil inside a clean mixing bowl. Place the dough in the mixing bowl and cover with a damp towel. Let rise in a warm place until dough doubles in size, about an hour.
6. Punch dough down and turn out onto a floured surface.
7. Roll out the dough using both a rolling pin and stretching it by hand, into approx. 14-15 inch circle.
8. Transfer the dough to a pizza peel or baking sheet, previously covered with a light layer of cornmeal.
9. With your forefingers, roll the edge of the dough and press, creating a decorative crust around the edge.

Grilled pizza:
Toppings of your choice (see our suggestions below)
2 cups pizza or spaghetti sauce
Mozzarella cheese
Round baking stone
Charcoal
