easy charcoal-grilled chicken
This basic grilled chicken recipe is one of our favorites and it's the easiest recipe ever. Often times, this never makes it to the table - we just end up standing around the chicken at the counter, pulling pieces off the bone and eating it right there! So delicious!
1 whole roasting chicken or turkey, 4-5 pounds
kosher salt
freshly ground black pepper
olive oil
hickory chips
charcoal
1. Prepare the charcoals according to package instructions.
2. Rinse the chiken inside and out with cold water and pat dry with a towel
3. Rub the outside of the chicken liberally with olive oil.
4. Sprinkle kosher salt and ground pepper over the outside of the chicken according to your taste.
5. Spread hot coals around the perimeter of a round grill or to the ends/sides of a rectangular/square grill.
6. Sprinkle hickory chips over the coals.
7. Place the chicken breast side down in the middle of the grill for 30 minutes.
8. Turn the chicken breast side up.
9. After another 30 minutes, check the internal temperature of the chicken by inserting a meat thermometer into the thickest part of the thigh. Chicken is done when the temperature reads 180 degrees.
10. Transfer the chicken to a platter and let rest for approx. 10 minutes.
